I have a growing list of what I like to call “maligned vegetables.” As a pescetarian (a silly name for those of us who eat fish, but no meat), I have yet to meet a vegetable I don’t love. Beets, brussel sprouts, rutabaga, turnip, parsnip — I love them all. Bring em on I say. I’m always trying to get my friends to see (and taste) the many wonders of a roasted beet or stir fried brussel sprouts. I’ve made a few converts and have scared others from ever eating at my house again. So I was delighted this morning when my husband emailed me this article about winter white veggies and the many ways we can enjoy them. Next time you’re cruising the aisles of the produce department, pick up that poor lowly vegetable that you usually ignore. It will surprise and delight you.
